General Mills World Headquarters in Minneapolis, MN

We were elated to have been chosen to be a part of the Pizza Professional culinary experience at the General Mills Headquarters.  Only ten independent pizzerias throughout the United States were hand-picked to attend this ground-breaking three-day event, where we broadened our knowledge of Italian cheese and dough formulations with the experts at General Mills and the Grande Cheese Company. 

We were welcomed into the Betty Crocker Kitchen where we spent time with the experts from the Grande Cheese Company.  Creating the freshest cheeses with all natural ingredients by using  traditional, Italian cheese-making techniques is what makes them the best in the industry.  

Working side-by-side with the corporate chefs of General Mills, we were able to experiment with several styles of pizza and their dough formulations.  Their Culinary Kitchen offered brick wood-fired, deck, conveyor, and conventional ovens, where we created Chicago deep dish, stuffed, Neopolitan, New York, Tavern, and Detroit styles of pies. 

Care, consistency, and high quality of their products is why we only use General Mills flour and Grande Cheese at Big Pauly's.  What a wonderful opportunity, and we were honored to have been chosen to participate.
